Mole is an authentic Mexican chicken dish often served for special occasions. Typically mole is prepared with a combination of Mexican dried chillies, nuts, sesame seeds, spices, fruit, garlic, etc. Enjoy this quick and delicious spicy Mexican styled chicken recipe.
Ingredients
chicken - 1
flour - for rolling
olive oil - 1 cup or oil
onions - 1 head, grated
garlic - 3 cloves
white wine - 1 cup
chicken broth - 2 cups
bay leaf - 1, ground into powder
paprika - 1 tablespoon (or use cayenne pepper)
salt - to taste
almonds - 2/5 cup (100 g) of crushed
green olives - 10
tomatoes - 3
Preparation
Thoroughly clean the chicken and cut it into pieces.
Roll the pieces in flour and fry them until browned in olive or sunflower oil with the grated onion and garlic cloves.
Add wine and broth, add the bay leaf and paprika.
Allow to boil for about 45 minutes, then add the chopped almond nuts, olives (whole or pitted) and chopped tomatoes.
Once the tomatoes are boiled well, remove the dish from the fire.
