About the Recipe
Chana masala is a very popular North Indian dish made with chickpeas in an spicy onion tomato gravy. It is also known by the names Chole, Channay, etc.
Ingredients
1-2 tbsp oil
2 tsp cumin seeds
2 cardamom pods
1 medium onion
5 garlic cloves
thumb sized piece of ginger -
1 green chili pepper
2 tsp coriander powder
1 tsp paprika powder
1/2 tsp turmeric powder
1/4 tsp red chili powder
2 tsp garam masala
2-3 medium tomatoes , finely chopped or puréed
500 g cooked chickpeas
2 cups ( 480 ml ) water
salt and pepper
To serve :
( brown ) rice
fresh cilantro
lemon juice
naan / roti
vegan yogurt
Preparation
In a pan sauté cumin seeds and onion until the onion is translucent .
Add the garlic , ginger and chili and sauté for another 2 minutes .
Add the ground spices , cook for another 30-60 seconds , then deglaze with the finely chopped or puréed tomatoes and cook for another 2-3 minutes .
Add the chickpeas and water, and season with salt and pepper to taste.
Leave to simmer for 20-30 minutes until the chickpeas are soft and everything has thickened a little bit.
Transfer about 1/3 to a blender , blend roughly , and return to the pan . ( Or mash a part )
Serve with rice , naan , roti , some fresh cilantro , vegan yogurt or however you prefer!
