About the Recipe

Chana masala is a very popular North Indian dish made with chickpeas in an spicy onion tomato gravy. It is also known by the names Chole, Channay, etc.

Ingredients


  • 1-2 tbsp oil

  • 2 tsp cumin seeds

  • 2 cardamom pods

  • 1 medium onion

  • 5 garlic cloves

  • thumb sized piece of ginger -

  • 1 green chili pepper

  • 2 tsp coriander powder

  • 1 tsp paprika powder

  • 1/2 tsp turmeric powder

  • 1/4 tsp red chili powder

  • 2 tsp garam masala

  • 2-3 medium tomatoes , finely chopped or puréed

  • 500 g cooked chickpeas

  • 2 cups ( 480 ml ) water

  • salt and pepper


To serve :

  • ( brown ) rice

  • fresh cilantro

  • lemon juice

  • naan / roti

  • vegan yogurt

Preparation

  1. In a pan sauté cumin seeds and onion until the onion is translucent .

  2. Add the garlic , ginger and chili and sauté for another 2 minutes .

  3. Add the ground spices , cook for another 30-60 seconds , then deglaze with the finely chopped or puréed tomatoes and cook for another 2-3 minutes .

  4. Add the chickpeas and water, and season with salt and pepper to taste.

  5. Leave to simmer for 20-30 minutes until the chickpeas are soft and everything has thickened a little bit.

  6. Transfer about 1/3 to a blender , blend roughly , and return to the pan . ( Or mash a part )

  7. Serve with rice , naan , roti , some fresh cilantro , vegan yogurt or however you prefer!
